羅臼Rausu
最高級の羅臼昆布を食べて育つため「日本一ぜいたくなウニ」と呼ばれる。世界自然遺産・知床の海。冬に旬が来るという点でも日本のウニの常識から外れている。Fed on Rausu kombu, the most expensive kelp in Japan, this urchin is called the most extravagantly fed in the country. The sea of Shiretoko, a World Natural Heritage site — and a winter season, which breaks the usual Japanese rule.

北海道ぎょれんは羅臼の漁期を1月中旬から6月末まで、旬を2月〜5月としている。Hokkaido Gyoren gives the Rausu fishing season as mid-January to the end of June, with the peak from February to May.

Strongylocentrotus intermedius (A. Agassiz, 1864)
北海道全域と東北北部、サハリン・沿海地方。日本でもっとも高値がつくウニのひとつ。Throughout Hokkaido and northern Tohoku, extending to Sakhalin and the Russian Far East. Commands some of the highest prices in the Japanese market.
キタムラサキウニより小ぶりだが、色が鮮やかで身が濃く、甘みが強いとされる。Smaller than M. nudus but more vividly coloured, with a denser texture and a stronger sweetness.

日本の東北・北海道から朝鮮半島東岸、ロシア沿海地方まで。日本では北海道と三陸の主力種。Northern Japan (Tohoku and Hokkaido), the east coast of the Korean peninsula and the Russian Far East. One of the two species behind most of Japan's northern harvest.
身が大きく量が取れる。甘みはおだやかで、クリーミーな口あたりという評価が多い。Large gonads with good yield. Usually described as creamy with a gentler, less concentrated sweetness than Ezo-bafun.
