How to eat sushi

Hands or chopsticks. Fish side down. One bite.

Pick up the piece with your fingers or chopsticks. Turn it so the fish, not the rice, touches the soy sauce. Dip lightly. Eat it in one bite if you can.

Do not stir wasabi into the soy sauce at a counter; the chef has already put wasabi in the piece. Ginger is for between pieces, not on top of them.

At a counter, order a few pieces at a time. It is fine to ask what is good today. It is fine to say you do not eat something.

At Tsukiji

Many sushi places here are counters with a handful of seats, and some are standing bars. Sets are quicker than ordering piece by piece. Cash is safer than assuming cards work. The official directory has 24 sushi shops.
