「sea egg」と呼び、白いウニの生殖巣を取り出して味つけし、殻に詰め直して焼く。百年を超える漁だが、1970〜80年代に南岸・南東岸・東岸の資源が激減し、1980年代末には漁業自体が崩壊した。1998〜2001年の3年禁漁で資源は劇的に戻った。「獲るのをやめれば戻る」ことを、はっきり示した数少ない例。Here they are sea eggs: the roe of the white urchin is taken out, seasoned, packed back into the shell and baked. The fishery is more than a century old, but stocks on the south, south-east and east coasts fell sharply through the 1970s and 1980s until it collapsed outright. A three-year total ban from 1998 to 2001 brought the population back dramatically — one of the clearest demonstrations anywhere that stopping works.

1879年の最初の保護法で4月から8月の採捕が禁じられた。1980年代末に資源が崩れ、1998〜2001年の3年間の全面禁漁で回復したが、2005年以降は原則として閉じたままで、再開には閣議の承認がいる。The first conservation law, in 1879, forbade taking sea eggs from April to August. The fishery collapsed in the late 1980s and recovered under a three-year total ban from 1998 to 2001, but has been closed as a rule since 2005; reopening requires Cabinet approval.
