済州の海女文化はユネスコ無形文化遺産に登録されている。ウニ（성게）はその漁の代表的な獲物のひとつで、성게국（ウニのスープ）として日常的に食べられる。The haenyeo diving culture of Jeju is on UNESCO's intangible heritage list. Sea urchin — seonggae — is one of its signature catches, and is eaten everyday as seonggae-guk, a clear urchin soup.

本州中部以南、四国・九州、朝鮮半島南部、中国南部沿岸、台湾。Central Honshu southwards, Shikoku and Kyushu, southern Korea, southern China and Taiwan.
夏が旬。精巣と卵巣で遊離アミノ酸の組成が異なることが報告されている。A summer species. Free amino acid composition has been shown to differ between testis and ovary as the gonad develops.

Hemicentrotus pulcherrimus (A. Agassiz, 1864)
本州・四国・九州の沿岸と朝鮮半島。日本の南側でとれる4種のひとつ。Coastal Honshu, Shikoku and Kyushu, and the Korean peninsula. One of the four species harvested in southern Japan.
小型で身が濃い。成熟した卵巣が苦くなることが知られており、その苦味の本体はプルケリミンという含硫アミノ酸として1999年に同定された。Small but concentrated. Mature ovaries are known to turn bitter; the compound responsible, pulcherrimine, was isolated from this species and identified as a sulphur-containing amino acid.

キタムラサキウニNorthern sea urchin
Mesocentrotus nudus (A. Agassiz, 1864)
日本の東北・北海道から朝鮮半島東岸、ロシア沿海地方まで。日本では北海道と三陸の主力種。Northern Japan (Tohoku and Hokkaido), the east coast of the Korean peninsula and the Russian Far East. One of the two species behind most of Japan's northern harvest.
身が大きく量が取れる。甘みはおだやかで、クリーミーな口あたりという評価が多い。Large gonads with good yield. Usually described as creamy with a gentler, less concentrated sweetness than Ezo-bafun.
