About the Japanese on this page
Some Japanese is left here on purpose. **Source titles** are given as published, so you can find the original. **Addresses are shown in Japanese as well as romanised**, because Japanese is what works in a taxi or a map app. Shop names keep the Japanese alongside for the same reason. Everything else — hours, closing days, prices, seating, how to get there, and the articles — is in English, translated from the Japanese edition rather than machine-translated on the fly.

A page for anyone thinking of opening a monja shop. We do not mix numbers confirmed in public sources with assumptions of our own. Anything confirmed carries its source and year; anything assumed is marked as an estimate.

How the format works
Structural strengths of the format
Low input cost. The main ingredients are flour, cabbage and dashi. Seafood and meat can be placed on the side that raises the price, as "unusual" items.
The customer does the cooking. Kitchen work leans toward preparation and serving. Because the cooking finishes at the table, the format depends less on the skill of a cook.
Long dwell time. People drink while they cook. Eight cooperative members advertise a wide drinks range. Spend per head tends to be built on drinks rather than on the monja itself.
Structural weaknesses
Tables do not turn. Long dwell time is low turnover by another name. In a small independent shop this is the ceiling on revenue.
Extraction is required. Every seat has an iron plate, so ducting and extraction are unavoidable. One Tsukishima shop advertises extraction ducting at every seat. This is a format where capital spending turns directly into the selling point that you will not go home smelling of it.
There is a cost to explaining. Customers who do not know how to cook it need to be shown. Where the location calls for other languages, that lands on staff costs.
Types of location
The Tsukishima type. Gathered along a shopping street. The cluster itself draws customers, at the price of constant comparison with the shop next door. Cooperative membership, and which block of the street you are on, both matter.
The station building and shopping centre type. The chains' main ground. KISSUI GROUP's official list is centred on sites inside developments: Shibuya Scramble Square, the Shin-Marunouchi Building, LUCUA Osaka, Midland Square, COCONO SUSUKINO, PARCO CITY in Okinawa. Monja spread across Japan through shopping centres, not through street-level shops.
The suburban outlet type. The same group has shops at Mitsui Outlet Park in Kisarazu, Okazaki and Shiga Ryuo. Family custom and long dwell time fit together.
The overseas type. Almost without precedent so far. What we could confirm is one shop at One Bangkok, plus local Japanese restaurants carrying it as one item on the menu.

For set-up costs (the price of a single iron-plate table, the cost of installing ducting and extraction), FL ratio, revenue per tsubo, and franchise fees and royalties, we could not confirm reliable public information, so we give no figures. We could line up estimates, but amounts without a basis mislead the person thinking of opening.
