バコロドのチキンイナサルを食べ比べるなら、屋台が並ぶマノカン・カントリーが一番の近道です。旧施設はSMプライムの再開発のため2025年2月に明け渡され、約24軒の屋台がSMシティ・バコロドの駐車場ハブに設けた仮設サイトへ移りました。2026年5月の市のチキンイナサル祭りも「SMシティ・バコロド マノカン・カントリー」で開幕しており、仮設サイトが今も街のイナサルの中心だと分かります。Aida's、Nena's Beth などの老舗が並ぶので、手で食べる・ライスにチキンオイルをかけるという作法ごと体験できます。If you want to compare Bacolod's chicken inasal side by side, the Manokan Country stall row is the shortcut. The old complex was vacated in February 2025 for SM Prime's redevelopment, and about 24 stalls moved to a temporary site in SM City Bacolod's parking hub. The city opened its 2026 Chicken Inasal Festival at 'SM City Bacolod Manokan Country' in May 2026, which shows the temporary site is still the heart of the inasal scene. Long-running names such as Aida's and Nena's Beth trade side by side, so you learn the ritual too: eat with your hands and pour chicken oil over your rice.

You eat under a roof, out of the smoke and heat, and on Saturdays it stays open until midnight, which helps on a late arrival. カンシは牛すね肉と骨髄を煮込み、バトゥアンという酸っぱい果実で味を締めるスープで、イナサルと並ぶバコロドの名物です。この店は1985年創業、キャピトル・ショッピングの素朴な店構えのまま、地元紙や旅行記事で「カンシならここ」と紹介され続けています。肉は何時間も煮込まれて骨から外れるほど柔らかく、酸味と脂の対比が一皿で分かります。2017年のWorld Street Food Congressでトップ50に選ばれた実績もあります。Cansi is beef shank and marrow simmered for hours and soured with batwan, a tart local fruit; alongside inasal it is Bacolod's signature dish. Open since 1985 in a plain Capitol Shopping shopfront, this is the name local papers and travel writers keep attaching to it. The meat falls off the bone and one bowl shows the whole idea of the dish: sour broth against rich marrow. It was also named among the World Street Food Congress top 50 in 2017.

1984年に21番街角の軽食堂として始まり、バッチョイ（豚骨スープの麺）で名を上げて、市を代表する大型レストランに育った店です。イナサル・カンシ・バッチョイというバコロドの名物を、冷房の効いた店内で一度に頼めるので、屋台が苦手な同行者がいる旅や家族連れに向きます。カードが使え、宴会室もある規模なので、記念日の食事にも使えます。It opened in 1984 as a snack house on the corner of 21st Street, made its name with batchoy (a pork-broth noodle soup) and grew into one of the city's flagship restaurants. You can order inasal, kansi and batchoy in one air-conditioned sitting, which suits families and companions who would rather skip the stalls. Cards are accepted and there are function rooms, so it also works for a celebration dinner.

Its empanada de kaliskis, whose fried pastry curls up like fish scales, and lumpia ubod, a fresh heart-of-palm spring roll, are held up as defining tastes of Silay. Buying them inside an old heritage house is itself a reason to make the trip out of Bacolod.

There are a dozen or so flavours at just over PHP 100 a glass, the easiest way to cool down on a tropical afternoon. The Bacolod branch on a main road means you can try it even if Silay is not on your route.

20世紀初めに砂糖農園主が亡き妻のために建て、第二次大戦中に焼け落ちた邸宅の廃墟で、「フィリピンのタージ・マハル」と呼ばれます。食事の名店ではありませんが、ネグロスの砂糖貴族の栄華を最も分かりやすく見られる場所で、廃墟を眺めながら敷地内のカフェで一息つけます。食べ歩き中心の旅でも、バコロドの食文化がなぜ甘く豊かなのかを理解する背景として1回入れる価値があります。The shell of a mansion built in the early 1900s by a sugar planter in memory of his wife and burned during the Second World War, now nicknamed the 'Taj Mahal of the Philippines'. It is not a food destination as such, but it is the clearest window onto the wealth of the Negros sugar barons, and you can take a break at the on-site cafe while looking out over the ruin. Even on a food-focused trip it earns a slot, because it explains why this region's food is so sweet and generous.

2003年創業、市内でまだコーヒー店が少なかった頃からジェラートとエスプレッソを出してきた先駆けのカフェです。2階建てでテラス席もあり、朝8時から夜まで開いているので、ラクソン通りに泊まる旅行者の朝食・休憩・夜のデザートのどれにも使えます。21レストランと近く、昼のバッチョイの後に歩いて寄れます。Opened in 2003, well before chain coffee shops arrived, it pioneered gelato and espresso in Bacolod. Two floors with terrace seating and hours from 8:00 until late make it useful for breakfast, an afternoon break or a night-time dessert if you stay on Lacson Street. It is a short walk from 21 Restaurant, so it pairs well with a batchoy lunch.
