It opens at 06:00 every day, which makes it the simplest way to experience a Seoul breakfast. The restaurant moved into a modern building when the alley was redeveloped, but its own site still claims the title of the original haejangguk house, and it appears in every roundup of Jongno's oldest restaurants. 孔徳の路地で1980年代から続く、練炭(ヨンタン)の火で豚を焼く「麻浦式」焼肉の代表。麻浦は塩焼き(소금구이)と豚皮(コプテギ)の発祥地とされ、この店はドラマ『ミセン』のロケ地としても知られる。店先の開けた造りで、エアコンがなく煙と炭の匂いの中で食べる形式そのものが体験になる。江南の高級サムギョプサル店とは正反対の、ソウルのサラリーマン文化そのものを1回の食事で味わえる。Tucked in a Gongdeok alley since the 1980s, this is the archetype of Mapo-style pork grilled over yeontan coal briquettes. Mapo is credited as the birthplace of salt-grilled pork and kkeopdegi (pork skin), and this shop is also known as a filming location for the drama 'Misaeng'. The open-front, no-air-conditioning setup, with smoke and charcoal in the air, is the experience itself, the opposite of a polished Gangnam pork house and a direct taste of Seoul office-worker culture.

東大門のタッカンマリ横丁で1978年から続く元祖格。鶏を丸ごと澄んだスープで煮て、卓上の醤油・酢・芥子・タデギを自分で混ぜたたれで食べ、最後に麺を入れる形式は、この横丁がソウルで最も分かりやすい。生後35日の若鶏だけを使うという点を観光公社の紹介ページも記している。深夜1時まで営業しており、東大門の夜市や買い物の後の夕食としても使える。The original of Dongdaemun's dak-hanmari alley, running since 1978. A whole young chicken is simmered in clear broth at the table; you mix your own dip from soy, vinegar, mustard and chili paste, then drop noodles into the pot at the end. The Korea Tourism Organization page notes the use of 35-day-old chickens only. Open until 01:00, it works as a late dinner after the Dongdaemun night markets.

1985年から乙支路3街の路地で平壌冷麺を出し、筆洞麺屋と姉妹関係にあるとされる「乙支路の冷麺」の象徴だった店。2022年6月に世運商街の再開発で閉店したのち、2024年春に鍾路3街駅そばの楽園洞へ移り、地下と1階の食堂として再開したことを中央日報が報じている。粉唐辛子とネギを散らした淡いスープの一杯は旧店舗と同じで、「消えた老舗が戻ってきた」文脈ごと味わえる。鍾路3街の益善洞・楽園楽器商街の散策と組み合わせやすい。From 1985 Eulji Myeonok served Pyongyang naengmyeon in an Euljiro 3-ga alley and, together with its sister Pildong Myeonok, defined 'Euljiro cold noodles'. It closed in June 2022 when the Sewoon redevelopment took the building, and JoongAng Ilbo reported its spring 2024 reopening in Nakwon-dong beside Jongno 3-ga Station, with dining on the basement and first floor. The bowl, pale broth scattered with chili flakes and scallion, is the same as before, and eating here carries the story of a lost institution returning. It pairs well with a walk through Ikseon-dong and the Nakwon instrument arcade.

1953年頃から五壮洞に集まった咸興冷麺の店の代表格で、平壌冷麺とは対照的な「甘辛いたれを絡めるコシの強いでんぷん麺」を出す。エイの刺身を載せた회비빔냉면が看板。公式サイトが本店と直営店を一覧しており、ソウル駅やスターフィールドにも支店があるが、五壮洞の本店で食べる意味は「咸興冷麺横丁」という場所そのものにある。乙支路の平壌冷麺と食べ比べると、韓国冷麺の二つの系統が一日で分かる。The flagship of Ojang-dong's Hamheung naengmyeon cluster, which formed around 1953. In contrast to Pyongyang-style, these are chewy starch noodles tossed in a sweet-hot sauce, and the signature version is topped with marinated skate. The official site lists the main branch plus outlets at Seoul Station and Starfield malls, but eating at the Ojang-dong original puts you on the street where the style took root. Pair it with a Pyongyang bowl in Euljiro to understand both traditions in one day.

1932年創業、ソウル式チュオタン(どじょう汁)を守る数少ない店で、2026年版ミシュランガイドでビブグルマン。牛の出汁に唐辛子・豆腐・麺を入れ、どじょうを丸ごと煮るソウル式と、すりつぶす全羅道式の2種類を出すのが特徴。3代にわたる家族経営で、ソウル市の「未来遺産」にも指定されている。西村の通仁洞店は景福宮駅から近く、参鶏湯(土俗村)と並ぶ「滋養の一杯」の選択肢になる。Founded in 1932 and one of the few places still serving Seoul-style chueotang (loach soup), Yonggeumok holds a Bib Gourmand in the MICHELIN Guide 2026. It offers two versions: the Seoul style with whole loach in beef broth with chili, tofu and noodles, and the Jeolla style with the fish ground in. Family-run for three generations and designated a Seoul Future Heritage site. The Tongin-dong branch in Seochon is close to Gyeongbokgung Station and is the alternative to samgyetang for a restorative bowl.

景福宮の石垣の向かいにある、2026年版ミシュランガイド一つ星の韓国料理店。伝統文化研究所「온지음」の食の工房から2013年に生まれ、宮中料理の研究者チョ・ウニ氏と海外で修業したパク・ソンベ氏が、古文献の研究を土台に朝鮮王朝の料理を現代の技法で組み立てる。醤の熟成庫を南楊州に持ち、韓国史の社内講座を続けるという運営の背景まで含めて、「韓定食」を最も知的に体験できる一軒。カウンター席から厨房が見える。Facing the stone wall of Gyeongbokgung, Onjium holds one MICHELIN star in the 2026 guide. It grew out of the food workshop of a traditional-culture research institute in 2013 and is led by court-cuisine scholar Cho Eun-hee and chef Park Sung-bae, who rebuild Joseon-era dishes with modern technique on the basis of historical texts. The restaurant keeps its own fermentation facility in Namyangju and runs in-house history classes. The counter seats look into the kitchen. It is the most scholarly way to experience Korean court food.

The guide describes a rich milky broth filled with cartilage, tendon and shank, clean and faintly sweet with a silky mouthfeel. It is the place to understand how this differs from seolleongtang and gomtang, and it pairs well with Seodaemun Prison History Hall or an Inwangsan walk.

The tabletop style, with rice cakes, fish cake, ramen noodles and dumplings simmered in a pan while you eat, is said to have spread from here; the Seoul Tourism Organization page notes the founding year and the special pans. If you want to try the sit-down, cook-at-the-table version rather than street tteokbokki, the original in the alley is the obvious choice.
