The inspectors describe a goose marinated with a secret recipe, put through more than 20 steps and charcoal-roasted, as unmissable. Being in the heart of Central and open all day from 10:00, it lets you fit Hong Kong's signature roast goose into a 30-minute gap between sights. Beyond the juicy, crisp-skinned goose, the inspectors single out the noodles tossed in goose fat and the silky goose blood pudding. Four minutes from Wan Chai MTR, open daily until 21:30, it is easy to pair with Yat Lok in Central for a head-to-head tasting. Inspectors note more than 20 skilfully made, keenly priced dim sum with a menu that rotates every two to three months. The inspectors sum it up neatly: different cuts of beef with a choice of noodles in a tasty clear broth or a spicy curry. Gough Street, a short lane between Sheung Wan and Central, is known for the queue outside as much as for the bowl itself. Cash only and closed on Sundays, but if wonton noodles are one pillar of Hong Kong noodle culture, this brisket bowl is the other.

Doors open at 07:00, so you can experience yum cha as the morning ritual it is, in the room where locals have done it for generations. The inspectors' pick, flower crab steamed with Huadiao wine and chicken fat over rice noodles, has become the dish that explains Hong Kong's obsession with freshness and precise steaming to the rest of the world. Eating wok-hei stir-fries at folding tables under umbrellas is something no indoor restaurant can reproduce. The wonton-noodle house founded in 1968 as a Central street stall by 'Mak Ngan', son of Guangzhou noodle master Mak Woon-chi, and moved to Wellington Street in the 1980s; the official site sets out the lineage and branches. It is known for preserving the original form—four bite-sized wontons and thin egg noodles in a small bowl of flounder-based broth. Silky rice noodle rolls with a hint of lard, dressed with sweet, sesame and soy sauces—Sham Shui Po's morning staple, listed as MICHELIN Selected in 2026. The inspectors also mention fish balls, pork skin and braised radish. Open from 06:00 at about HKD 15 a plate, it is the natural first stop of a breakfast crawl with Lau Sum Kee and Kung Wo. You get the un-touristed back-street atmosphere along with the food.

A plain shop with a red sign that serves charcoal-cooked claypot rice in the evenings only, listed as a Bib Gourmand in 2026. The inspectors praise the chewy rice with its charred crust, single out the white-eel version, and advise ordering immediately because the pots take time. If you want Hong Kong's autumn-winter classic among locals, this is the standard answer, three minutes from Sai Ying Pun MTR and close to Sheung Wan and Central.

Known for MSG-free congee on a fish-broth base, it became the first congee shop with a Bib Gourmand in 2018 and the Wan Chai shop is listed again in 2026. The inspectors' picks—pork liver and scallop congee, poached dace skin—explain Hong Kong congee culture in one sitting. The parent company (Tai Hing Group) runs an official brand page, which confirms this Heard Street shop among its 13 outlets. It is a short walk from Kam's Roast Goose, so roast meats and congee fit in the same half-day.

The first Chinese restaurant in the world to hold three MICHELIN stars (inaugural 2009 guide), Lung King Heen has held two stars since 2023 and keeps them in 2026. The inspectors cite sophisticated Cantonese cooking from produce sourced worldwide, the dim sum lunch and double-boiled soups, all with a Victoria Harbour view. Tim Ho Wan's founder Mak Kwai-pui once ran the dim sum here, so visiting both shows the full span of Hong Kong dim sum. For travellers who value hotel-level comfort, it is the most bookable starred Cantonese room.

Founded in 1942 by Kam Shui-fai, nicknamed 'Roast Goose Fai', Yung Kee is the mother house of Hong Kong roast goose, famous as the 'flying roast goose' because travellers carried it onto planes. Roasting around 300 birds a day in a gilded multi-storey restaurant, it is a different experience from stall-like Yat Lok or 30-seat Kam's. Its inaugural-guide star (2009) and the family ownership dispute are documented on English Wikipedia; it holds no current award, but with online booking and a takeaway counter it is the easiest place for a group to sit down around a goose.

A Wan Chai roast-meat shop said to predate the war, and the one most often named for char siu. Time Out points to the barbecued pork and soy chicken and notes there is never an empty seat. Where Yat Lok and Kam's are about goose, this is a HKD 50 char siu rice—the everyday Hong Kong lunch—on the same Hennessy Road as Kam's, so comparison is easy. The bare, shared-table room is the original landscape of siu mei culture.

Wok-firing in Sham Shui Po since 1956, one of the oldest dai pai dong in Hong Kong—Foodie (June 2026) calls it the original and Time Out among the oldest of all. The wok-hei from the street-side kitchen and staples like salt-and-pepper squid or razor clams with black beans have a rawness indoor seafood restaurants cannot match. A surviving dai pai dong in a Central back lane, famous for tangy tomato-broth instant noodles with beef and egg, and crispy buns with lemon and honey. Time Out describes it as having survived every change in the Central dining scene; Hello! Hong Kong notes the lunch queue and Sunday closure. Open from 08:00, it pairs well as breakfast before Kau Kee (which opens at 12:30) around the corner. Unlike roast meats or dim sum, this is the working Hong Kong breakfast table, unedited.

Opened in 1950 and still fitted with wooden booths, mosaic tiles and iron-grille windows, this two-storey cha chaan teng has appeared in many Hong Kong films including Days of Being Wild (1990). It closed abruptly in 2022 and reopened that October, and the tourism board features it as the archetypal preserved bing sutt. Sitting on the same block as the Temple Street market and Tin Hau Temple, it fits an afternoon in Yau Ma Tei—best approached as a room to sit in rather than a kitchen to rate.

Opened in 1972 and trading from 03:00 to 16:00, this Kennedy Town dim sum canteen seats night-shift workers, early-rising elders, students and late revellers at the same tables. Staff walk round with steamers straight from the kitchen and you take what you want—an older way than ticking order sheets. A family-run bing sutt in Prince Edward since 1973, most often named as Hong Kong's best 'bo lo yau'—a hot pineapple bun with a cold slab of butter. Buns are baked on site, so timing your visit to a fresh batch pays off, and Time Out and travel outlets also recommend the French toast. Three minutes from Prince Edward MTR and open from 06:30, it makes a natural breakfast before the Flower Market and Mong Kok. The pineapple bun entered Hong Kong's intangible heritage inventory in 2014, and this is the place to taste the benchmark.
